Oyster Sauce Chinese Lettuce (蚝油绍菜)

Oyster Sauce Chinese Lettuce, or 蚝油绍菜, is a straightforward yet tasty dish that combines the crisp texture of Chinese lettuce with the rich flavors of oyster sauce. This dish is quick to prepare and makes a wonderful side for any Chinese meal.

  • 500 g Chinese lettuce celtuce, peeled and sliced into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 3 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • A splash of water about 2-3 tablespoons
  • Salt and pepper to taste



  • Peel the outer skin of the Chinese lettuce to reveal the tender inner part.
  • Slice it into 2-inch pieces.

Garlic and Oil:

  • Heat up a wok or large skillet over medium-high heat and add the vegetable oil.
  • Sauté the minced garlic until it becomes fragrant but not browned.

Cook the Chinese Lettuce:

  • Add the sliced Chinese lettuce to the pan and stir-fry for 2-3 minutes to coat the pieces in oil and garlic.

Add Flavors:

  • Pour in the oyster sauce and soy sauce, mixing well to ensure the Chinese lettuce is evenly coated.

Stir and Steam:

  • Add a splash of water and cover the pan for about 2 minutes. This will steam the Chinese lettuce, making it tender yet crisp.

Taste and Adjust:

  • Remove the lid and give it a quick taste. Add salt and pepper if necessary, but keep in mind that the oyster sauce is already quite salty.


  • Once the Chinese lettuce is tender to your liking, transfer it to a serving dish and serve immediately.
