Clear Vegetable Soup (清菜湯)
Clear Vegetable Soup, or 清菜湯, is the epitome of comfort food in its simplest form. This soul-warming soup is all about highlighting the natural flavors of fresh vegetables. It's easy to prepare, making it perfect for any day of the week.
Ingredients
- 1.5 liters water
- 2 vegetable stock cubes
- 200 g napa cabbage chopped
- 2 carrots sliced
- 1 onion chopped
- 2 potatoes diced
- 2 cloves garlic minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Optional:
- A handful of chopped tofu or cooked chicken breast for added protein
- A few drops of sesame oil for added aroma
Instructions
Prepare Vegetables:
- Wash and chop all the vegetables into bite-sized pieces.
Sauté Aromatics:
- In a large pot, heat the vegetable oil over medium heat.
- Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
Add Water and Stock:
- Pour the water into the pot and bring it to a boil.
- Add the vegetable stock cubes and stir until dissolved.
Add Vegetables:
- Add the carrots and potatoes to the pot, letting them cook for about 10 minutes or until they start to soften.
Add Leafy Greens:
- Add the chopped napa cabbage to the pot and cook for an additional 5-7 minutes or until wilted.
Season:
- Taste the soup and add salt and pepper as needed.
Optional Add-ins:
- If using, add the chopped tofu or cooked chicken breast at this stage.
- For an extra touch of flavor, a few drops of sesame oil can be added as well.
Serve:
- Once all the vegetables are cooked to your liking and the flavors have melded together, it's time to serve the soup hot.
