Clear Vegetable Soup (清菜湯)

Clear Vegetable Soup, or 清菜湯, is the epitome of comfort food in its simplest form. This soul-warming soup is all about highlighting the natural flavors of fresh vegetables. It's easy to prepare, making it perfect for any day of the week.

  • 1.5 liters water
  • 2 vegetable stock cubes
  • 200 g napa cabbage chopped
  • 2 carrots sliced
  • 1 onion chopped
  • 2 potatoes diced
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


  • A handful of chopped tofu or cooked chicken breast for added protein
  • A few drops of sesame oil for added aroma


Prepare Vegetables:

  • Wash and chop all the vegetables into bite-sized pieces.

Sauté Aromatics:

  • In a large pot, heat the vegetable oil over medium heat.
  • Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.

Add Water and Stock:

  • Pour the water into the pot and bring it to a boil.
  • Add the vegetable stock cubes and stir until dissolved.

Add Vegetables:

  • Add the carrots and potatoes to the pot, letting them cook for about 10 minutes or until they start to soften.

Add Leafy Greens:

  • Add the chopped napa cabbage to the pot and cook for an additional 5-7 minutes or until wilted.


  • Taste the soup and add salt and pepper as needed.

Optional Add-ins:

  • If using, add the chopped tofu or cooked chicken breast at this stage.
  • For an extra touch of flavor, a few drops of sesame oil can be added as well.


  • Once all the vegetables are cooked to your liking and the flavors have melded together, it's time to serve the soup hot.
