Braised Tofu (紅燒豆腐)
This comforting meal is a hit in Chinese households and offers a blend of savory, sweet, and aromatic flavors, all while keeping tofu as the star of the show.
Ingredients
- 400 g firm or extra-firm tofu
- 30 ml vegetable oil
- 3 cloves garlic minced
- 2.5 cm piece of ginger thinly sliced
- 1 green onion chopped (for garnish)
- 60 ml soy sauce
- 30 ml oyster sauce
- 15 g sugar
- 240 ml water or vegetable broth
- 5 ml cornstarch mixed with 30 ml water
- red chili flakes for some heat
Instructions
Prepare the Tofu:
- Drain the tofu and cut it into 2.5 cm cubes. Optionally, press the tofu to remove excess moisture by placing it between paper towels and putting a weighted object on top for about 15 minutes.
Brown the Tofu:
- Heat 15 ml of vegetable oil in a skillet over medium heat.
- Add the tofu cubes and cook until they are golden brown on all sides. Remove and set aside.
Make the Sauce:
- In a small bowl, mix together soy sauce, oyster sauce, and sugar. Set aside.
Cook the Aromatics:
- Heat the remaining 15 ml of oil in the same skillet.
- Add the minced garlic and sliced ginger, sautéing until fragrant.
Simmer the Tofu:
- Add the browned tofu back into the skillet.
- Pour in the sauce mixture and the water or vegetable broth.
- Bring it to a simmer and let it cook for about 10 minutes, allowing the tofu to absorb the flavors.
Thicken the Sauce:
- Stir in the cornstarch and water mixture to thicken the sauce. Simmer for another 2-3 minutes.
Garnish and Serve:
- Sprinkle with chopped green onions and optional red chili flakes.
- Serve the Red-Braised Tofu hot, ideally over steamed rice or with stir-fried vegetables.
