Ingredients
- 1 block of silken tofu drained and cut into cubes
- 2 tablespoons vegetable oil
- 2 cloves garlic minced
- 1 teaspoon ginger minced
- 1 green onion chopped
- 1 small carrot julienned
- 1/2 bell pepper sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 teaspoon cornstarch mixed with 2 tablespoons water cornstarch slurry
- Optional: a handful of chopped mushrooms or snap peas
Instructions
Prepare the Tofu:
- Carefully cut the silken tofu into medium-sized cubes. Gently place them on a paper towel to drain any excess moisture.
Cook Garlic and Ginger:
- Heat oil in a pan over medium heat. Add minced garlic and ginger, and sauté until fragrant.
Add Vegetables:
- Add the julienned carrot and sliced bell pepper to the pan (and mushrooms or snap peas if using). Stir-fry until they are just tender.
Gently Add the Tofu:
- Carefully place the tofu cubes into the pan. Gently stir to mix with the vegetables, being careful not to break the tofu.
Season:
- Add soy sauce, oyster sauce, and sugar. Season with salt and pepper to taste. Gently stir to evenly coat the tofu and vegetables.
Thicken the Sauce:
- Add the cornstarch slurry to the pan. Gently stir until the sauce thickens and becomes glossy.
Garnish and Serve:
- Sprinkle with chopped green onions.
