Ingredients
  

  • 1 cup cooked rice
  • 200 g thinly sliced meat pork, chicken, or beef
  • 2 large eggs beaten
  • 2 medium-sized tomatoes diced
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Green onions for garnish

Instructions
 

Preparation:

  • Have cooked rice ready in a serving dish.
  • Cut the meat into thin slices and marinate it in 1 tablespoon of soy sauce for about 15 minutes.

Cook the Meat:

  • Heat a tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  • Add the minced garlic and chopped onion, sautéing until the onion becomes translucent.
  • Add the marinated meat and stir-fry until fully cooked. Remove the meat from the pan and set it aside.

Cook the Tomatoes and Eggs:

  • In the same pan, add another tablespoon of oil if needed.
  • Add the diced tomatoes and cook until they soften and release their juice.
  • Push the tomatoes to one side of the pan, and pour the beaten eggs into the other side.
  • Let the eggs sit for a few seconds to set slightly, then scramble them until they are mostly cooked but still a little runny.

Combine:

  • Stir the cooked meat back into the pan with the tomatoes and eggs.
  • Add the remaining tablespoon of soy sauce and the oyster sauce, mixing well.
  • Season with salt and pepper to taste.

Assemble the Dish:

  • Spoon the meat, tomato, and egg mixture over the bed of cooked rice.
  • Garnish and Serve:
  • Optional: sprinkle with chopped green onions for added color and flavor.
