This dish combines tender beef slices with soft, scrambled eggs and pan-fried rice noodles. It's a delicious and comforting dish often found in Chinese and other East Asian cuisines.
Ingredients
For the Beef Marinade:
- 250 g beef sirloin thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- A dash of pepper
For the Rice Noodles:
- 200 g flat rice noodles
- 2 tablespoons oil for pan-frying
For the Eggs:
- 3 large eggs
- A pinch of salt
- A dash of pepper
For the Sauce:
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 100 ml water
Additional:
- 2 green onions chopped
- 2 cloves garlic minced
Instructions
Marinate the Beef:
- In a bowl, mix together the beef slices, soy sauce, cornstarch, and pepper.
- Let it sit for about 15-20 minutes.
Prepare the Noodles:
- Soak the flat rice noodles in warm water for 20-30 minutes until they soften. Drain and set aside.
Make the Sauce:
- Mix together the oyster sauce, soy sauce, sugar, and water in a bowl. Set aside.
Cook the Beef:
- Heat a tablespoon of oil in a pan over medium-high heat.
- Stir-fry the marinated beef until it's browned but not fully cooked. Remove from the pan and set aside.
Scramble the Eggs:
- In the same pan, add a bit more oil if needed.
- Beat the eggs with a pinch of salt and pepper.
- Pour the eggs into the pan and scramble until they're softly cooked. Remove and set aside with the beef.
Pan-Fry the Noodles:
- Add 2 tablespoons of oil to the pan and heat it up.
- Add the softened rice noodles and pan-fry until they start to get a bit crispy.
Combine Everything:
- Toss the beef and eggs back into the pan with the noodles.
- Add the minced garlic and green onions.
- Pour the sauce over everything and mix well to combine.
Serve:
- Dish it up hot, garnished with some extra chopped green onions if you like.
