Silky Egg and Beef Pan-Fried Rice Noodles (滑蛋牛肉煎米粉)

 

This dish combines tender beef slices with soft, scrambled eggs and pan-fried rice noodles. It's a delicious and comforting dish often found in Chinese and other East Asian cuisines.

Ingredients
  

For the Beef Marinade:

  • 250 g beef sirloin thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • A dash of pepper

For the Rice Noodles:

  • 200 g flat rice noodles
  • 2 tablespoons oil for pan-frying

For the Eggs:

  • 3 large eggs
  • A pinch of salt
  • A dash of pepper

For the Sauce:

  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 100 ml water

Additional:

  • 2 green onions chopped
  • 2 cloves garlic minced

Instructions
 

Marinate the Beef:

  • In a bowl, mix together the beef slices, soy sauce, cornstarch, and pepper.
  • Let it sit for about 15-20 minutes.

Prepare the Noodles:

  • Soak the flat rice noodles in warm water for 20-30 minutes until they soften. Drain and set aside.

Make the Sauce:

  • Mix together the oyster sauce, soy sauce, sugar, and water in a bowl. Set aside.

Cook the Beef:

  • Heat a tablespoon of oil in a pan over medium-high heat.
  • Stir-fry the marinated beef until it's browned but not fully cooked. Remove from the pan and set aside.

Scramble the Eggs:

  • In the same pan, add a bit more oil if needed.
  • Beat the eggs with a pinch of salt and pepper.
  • Pour the eggs into the pan and scramble until they're softly cooked. Remove and set aside with the beef.

Pan-Fry the Noodles:

  • Add 2 tablespoons of oil to the pan and heat it up.
  • Add the softened rice noodles and pan-fry until they start to get a bit crispy.

Combine Everything:

  • Toss the beef and eggs back into the pan with the noodles.
  • Add the minced garlic and green onions.
  • Pour the sauce over everything and mix well to combine.

Serve:

  • Dish it up hot, garnished with some extra chopped green onions if you like.
