For the Beef Marinade:
- 250 g beef sirloin thinly sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- A dash of pepper
For the Rice Noodles:
- 200 g flat rice noodles
- 2 tablespoons oil for pan-frying
For the Eggs:
- 3 large eggs
- A pinch of salt
- A dash of pepper
For the Sauce:
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 100 ml water
Additional:
- 2 green onions chopped
- 2 cloves garlic minced
Marinate the Beef:
In a bowl, mix together the beef slices, soy sauce, cornstarch, and pepper.
Let it sit for about 15-20 minutes.
Scramble the Eggs:
In the same pan, add a bit more oil if needed.
Beat the eggs with a pinch of salt and pepper.
Pour the eggs into the pan and scramble until they're softly cooked. Remove and set aside with the beef.
Combine Everything:
Toss the beef and eggs back into the pan with the noodles.
Add the minced garlic and green onions.
Pour the sauce over everything and mix well to combine.
