Ingredients

For the Fried Rice:

  • 3 cups cooked jasmine rice preferably a day old
  • 200 g chicken breast diced
  • 1 cup fresh pineapple diced
  • 1/2 cup mixed vegetables like peas, carrots, and corn
  • 2 eggs beaten
  • 2 tablespoons oil
  • 2 green onions finely chopped
  • 1/4 cup cashews or almonds optional

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper

Instructions

Prep the Sauce:

  • In a small bowl, combine the soy sauce, fish sauce, sugar, and white pepper. Stir well and set aside.

Cook Chicken:

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until it turns white. Remove from the skillet and set aside.

Cook Eggs:

  • In the same skillet, add the beaten eggs and scramble until just cooked. Remove from the skillet and set aside with the chicken.

Stir-fry Vegetables and Pineapple:

  • Add the remaining tablespoon of oil to the skillet. Add the mixed vegetables and stir-fry for 2-3 minutes, or until they begin to soften. Add the pineapple and cook for another minute.

Add Rice:

  • Add the cooked rice to the skillet, breaking up any clumps.

Combine Ingredients:

  • Add the cooked chicken and scrambled eggs back into the skillet. Stir well to combine with the rice and vegetables.

Pour in the Sauce:

  • Drizzle the sauce over the rice mixture and mix well to ensure the sauce evenly coats all the ingredients.

Add Nuts and Green Onions:

  • If using, add the cashews or almonds and give the mixture another quick stir. Sprinkle with chopped green onions.

Serve:

  • Serve hot, either as a main course or a side dish.
