Pineapple Chicken Fried Rice (波蘿鷄粒炒飯)
波蘿鷄粒炒飯, or Pineapple Chicken Fried Rice, is a tropical twist on a classic Chinese dish. With succulent chicken, juicy pineapple, and a medley of colorful vegetables, this fried rice is as pleasing to the eyes as it is to the palate. It's a crowd-pleaser that can be whipped up in no time!
Ingredients
For the Fried Rice:
- 3 cups cooked jasmine rice preferably a day old
- 200 g chicken breast diced
- 1 cup fresh pineapple diced
- 1/2 cup mixed vegetables like peas, carrots, and corn
- 2 eggs beaten
- 2 tablespoons oil
- 2 green onions finely chopped
- 1/4 cup cashews or almonds optional
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
Instructions
Prep the Sauce:
- In a small bowl, combine the soy sauce, fish sauce, sugar, and white pepper. Stir well and set aside.
Cook Chicken:
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook until it turns white. Remove from the skillet and set aside.
Cook Eggs:
- In the same skillet, add the beaten eggs and scramble until just cooked. Remove from the skillet and set aside with the chicken.
Stir-fry Vegetables and Pineapple:
- Add the remaining tablespoon of oil to the skillet. Add the mixed vegetables and stir-fry for 2-3 minutes, or until they begin to soften. Add the pineapple and cook for another minute.
Add Rice:
- Add the cooked rice to the skillet, breaking up any clumps.
Combine Ingredients:
- Add the cooked chicken and scrambled eggs back into the skillet. Stir well to combine with the rice and vegetables.
Pour in the Sauce:
- Drizzle the sauce over the rice mixture and mix well to ensure the sauce evenly coats all the ingredients.
Add Nuts and Green Onions:
- If using, add the cashews or almonds and give the mixture another quick stir. Sprinkle with chopped green onions.
Serve:
- Serve hot, either as a main course or a side dish.
