Lotus Root, Peanut, and Pork Rib Soup (蓮藕花生排骨湯)
This classic Chinese soup is not only flavorful but also considered beneficial for health in traditional Chinese medicine.
Ingredients
For the Soup:
- 500 g pork ribs
- 300 g lotus root peeled and sliced
- 100 g raw peanuts soaked overnight
- 2.5 litres water
- 1 piece of ginger about 5 cm, sliced
- Salt to taste
For Garnish:
- A few sprigs of fresh coriander chopped (optional)
Instructions
Preparation:
- Soak the raw peanuts overnight in water.
- Blanch the pork ribs in boiling water for 5 minutes to remove impurities, then rinse and set aside.
Cook the Soup Base:
- In a large pot, bring 2.5 liters of water to a boil.
- Add the blanched pork ribs and ginger slices to the boiling water.
- Reduce heat to a simmer and cook for 30 minutes, skimming off any foam or fat that rises to the top.
Add Lotus Root and Peanuts:
- Add the peeled and sliced lotus root and soaked peanuts to the pot.
- Continue simmering for another 1 to 1.5 hours, until the lotus root becomes tender and the peanuts are soft.
Season:
- Taste the soup and add salt according to your preference.
Garnish and Serve:
- Optional: Sprinkle chopped coriander over the soup for added color and flavor.
- Serve hot, either as a standalone dish or as part of a larger meal.
