Lotus Root and Peanut Pork Rib Soup (蓮藕花生排骨湯)

Ingredients
  

  • 500 g pork ribs chopped into bite-sized pieces
  • 300 g fresh lotus root peeled and sliced
  • 100 g raw peanuts soaked overnight
  • 2-3 slices of ginger
  • 2 liters water
  • Salt to taste

Instructions
 

Prepare the Ribs:

  • Blanch the pork ribs in boiling water for about 5 minutes to remove any impurities. Drain and rinse under cold water. Set aside.

Prepare the Lotus Root:

  • Peel the lotus root and slice it into 1/4-inch thick pieces.

Soak the Peanuts:

  • Soak the raw peanuts in water overnight. This helps to soften them and reduce cooking time.

Cook the Soup:

  • In a large pot, add the blanched pork ribs, soaked peanuts, sliced lotus root, and ginger slices.
  • Pour in 2 liters of water. Bring it to a boil.

Simmer:

  • Once boiling, reduce the heat to low and let the soup simmer for about 1.5 to 2 hours. The longer it simmers, the more flavorful it will be.

Season:

  • Season the soup with salt according to your taste.

Serve:

  • Serve the soup hot. You can garnish it with chopped green onions or cilantro if desired.
