Ingredients
- 500 g pork ribs chopped into bite-sized pieces
- 300 g fresh lotus root peeled and sliced
- 100 g raw peanuts soaked overnight
- 2-3 slices of ginger
- 2 liters water

Instructions
Prepare the Ribs:
- Blanch the pork ribs in boiling water for about 5 minutes to remove any impurities. Drain and rinse under cold water. Set aside.
Prepare the Lotus Root:
- Peel the lotus root and slice it into 1/4-inch thick pieces.
Soak the Peanuts:
- Soak the raw peanuts in water overnight. This helps to soften them and reduce cooking time.
Cook the Soup:
- In a large pot, add the blanched pork ribs, soaked peanuts, sliced lotus root, and ginger slices.
