  • 2 cups of your choice of seasonal vegetables e.g., bok choy, bell peppers, broccoli, snow peas
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 cup chicken broth or water
  • Salt and pepper to taste
  • Optional: 1 teaspoon cornstarch mixed with 2 tablespoons water for thickening the sauce

Instructions

Prepare Ingredients:

  • Wash and chop the vegetables into bite-sized pieces.

Slice the pork belly thinly.

  • Cut the tofu into cubes and pat dry with paper towels.

Cook Pork Belly:

  • Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
  • Add the pork belly slices and fry until they are browned and crispy. Remove from the pan and set aside.

Stir-Fry Vegetables:

  • In the same pan, add the minced garlic and stir-fry until fragrant.
  • Add the chopped vegetables and stir-fry for about 3-4 minutes, or until they are tender but still crisp. Remove from the pan and set aside with the pork.

Cook Tofu:

  • Add the remaining tablespoon of oil to the pan.
  • Gently add the tofu cubes and fry until all sides are golden brown. Be careful not to break the tofu.

Combine Ingredients:

  • Return the cooked pork and vegetables to the pan with the tofu.

Add Seasonings:

  • Add oyster sauce, soy sauce, sugar, and chicken broth or water. Stir gently to combine. Season with salt and pepper to taste.

Thicken Sauce (Optional):

  • If desired, add the cornstarch-water mixture to the pan to thicken the sauce.

Serve:

  • Once everything is heated through and well-coated with the sauce, transfer to a serving dish.
