上海粗炒麵, or Shanghai Stir-Fried Thick Noodles, is a classic and popular Chinese dish known for its thick, chewy noodles tossed in a savory sauce with vegetables and sometimes meat. This dish is characterized by its rich flavor and varied textures. Here’s how you can make Shanghai Stir-Fried Thick Noodles at home.

Ingredients
  

For the Noodles:

  • 400 g fresh Shanghai thick noodles or udon noodles as a substitute
  • 2 tablespoons vegetable oil

For the Stir-Fry:

  • 2 cloves garlic minced
  • 1 small onion thinly sliced
  • 1 bell pepper sliced into strips
  • 1 cup bok choy or Chinese cabbage chopped
  • 1 carrot julienned
  • 100 g shiitake mushrooms sliced (optional)
  • 2 green onions chopped
  • 1 tablespoon sesame oil

For the Sauce:

  • 2 tablespoons dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon oyster sauce
  • A dash of ground white pepper

Instructions
 

Prepare the Noodles:

  • Cook the Shanghai noodles according to the package instructions until they are just al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Sauce:

  • In a small bowl, mix together dark soy sauce, light soy sauce, sugar, oyster sauce, and white pepper. Set aside.

Stir-Fry the Vegetables:

  • Heat 1 tablespoon of vegetable oil in a wok or large frying pan over high heat.
  • Add garlic and onion, and stir-fry for about 1 minute.
  • Add bell pepper, bok choy, carrot, and mushrooms. Stir-fry for another 2-3 minutes until the vegetables are tender but still crisp.

Cook the Noodles:

  • Push the vegetables to the side of the wok and add another tablespoon of oil.
  • Add the noodles to the wok and stir-fry for a minute.

Combine Noodles and Vegetables:

  • Mix the vegetables with the noodles in the wok.

Add the Sauce:

  • Pour the sauce over the noodles and vegetables. Toss everything together to coat evenly with the sauce.
  • Finish with Sesame Oil and Green Onions:
  • Drizzle sesame oil over the noodles and add the chopped green onions. Give everything a final mix.

Serve:

  • Serve the Shanghai Stir-Fried Thick Noodles hot.
