For the Dumplings:

  • 200 g ground pork or chicken
  • 100 g shrimp finely chopped (optional)
  • 1 cup Chinese cabbage finely chopped
  • 2 green onions finely chopped
  • 1 teaspoon ginger grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • Dumpling wrappers
  • Salt and pepper to taste

For the Soup:

  • 150 g rice vermicelli
  • 1.5 liters chicken or vegetable broth
  • 1 carrot thinly sliced
  • 1 cup bok choy or any leafy greens chopped
  • 2 green onions sliced for garnish
  • Salt and white pepper to taste


Prepare Dumplings:

  • In a mixing bowl, combine ground pork or chicken, chopped shrimp (if using), Chinese cabbage, green onions, ginger, soy sauce, sesame oil, and cornstarch. Season with salt and pepper.
  • Place a small amount of filling in the center of each dumpling wrapper. Wet the edges with water and fold the wrapper to seal the filling inside, making sure to press out any air pockets.

Cook Rice Vermicelli:

  • Cook rice vermicelli according to package instructions until just tender. Drain and set aside.

Prepare the Soup:

  • In a large pot, bring the chicken or vegetable broth to a simmer.
  • Add sliced carrots and cook until they start to soften.

Cook Dumplings:

  • Gently add the dumplings to the simmering broth. Cook until they float to the top and the filling is cooked through, about 3-4 minutes.

Add Greens:

  • Add the chopped bok choy or leafy greens to the soup. Cook for an additional minute.

Assemble and Serve:

  • Divide the cooked rice vermicelli among serving bowls.
  • Ladle the hot soup with dumplings and vegetables over the noodles.
  • Garnish with sliced green onions.
