叉燒粒疍炒飯, or Char Siu and Egg Fried Rice, is a classic Cantonese dish that's a staple in many Chinese restaurants and households. It features flavorful char siu (Chinese BBQ pork) and fluffy eggs, combined with aromatic fried rice. This dish is not only delicious but also a great way to use leftover rice. Here's a simple recipe to make this popular dish at home.

Ingredients
  

  • 2 cups of cooked jasmine rice preferably day-old
  • 200 g char siu Chinese BBQ pork, diced
  • 2 large eggs beaten
  • 1/2 cup frozen peas thawed
  • 2 green onions thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

Prepare Ingredients:

  • Dice the char siu into small, bite-sized pieces. Beat the eggs and slice the green onions. Set aside.

Fry the Eggs:

  • Heat a wok or large frying pan over medium heat. Add a teaspoon of oil.
  • Pour in the beaten eggs and scramble until just set. Remove the eggs from the wok and set aside.

Sauté Aromatics:

  • Add another tablespoon of oil to the wok. Sauté the minced garlic until fragrant.

Add Char Siu:

  • Add the diced char siu to the wok and stir-fry for a couple of minutes until it starts to caramelize.

Add Rice and Peas:

  • Add the cooked rice and peas to the wok. Stir-fry everything together, breaking up any clumps of rice.

Season:

  • Drizzle the soy sauce and sesame oil over the rice. Season with salt and pepper. Stir everything thoroughly to ensure the rice is evenly coated with the seasonings.
  • Add Scrambled Eggs and Green Onions:
  • Return the scrambled eggs to the wok. Add the sliced green onions. Mix everything together gently.

Serve:

  • Once everything is well combined and the rice is heated through, transfer to a serving dish.
