Braised Tofu (紅燒豆腐)

This comforting meal is a hit in Chinese households and offers a blend of savory, sweet, and aromatic flavors, all while keeping tofu as the star of the show.

Ingredients
  

  • 400 g firm or extra-firm tofu
  • 30 ml vegetable oil
  • 3 cloves garlic minced
  • 2.5 cm piece of ginger thinly sliced
  • 1 green onion chopped (for garnish)
  • 60 ml soy sauce
  • 30 ml oyster sauce
  • 15 g sugar
  • 240 ml water or vegetable broth
  • 5 ml cornstarch mixed with 30 ml water
  • red chili flakes for some heat

Instructions
 

Prepare the Tofu:

  • Drain the tofu and cut it into 2.5 cm cubes. Optionally, press the tofu to remove excess moisture by placing it between paper towels and putting a weighted object on top for about 15 minutes.

Brown the Tofu:

  • Heat 15 ml of vegetable oil in a skillet over medium heat.
  • Add the tofu cubes and cook until they are golden brown on all sides. Remove and set aside.

Make the Sauce:

  • In a small bowl, mix together soy sauce, oyster sauce, and sugar. Set aside.

Cook the Aromatics:

  • Heat the remaining 15 ml of oil in the same skillet.
  • Add the minced garlic and sliced ginger, sautéing until fragrant.

Simmer the Tofu:

  • Add the browned tofu back into the skillet.
  • Pour in the sauce mixture and the water or vegetable broth.
  • Bring it to a simmer and let it cook for about 10 minutes, allowing the tofu to absorb the flavors.

Thicken the Sauce:

  • Stir in the cornstarch and water mixture to thicken the sauce. Simmer for another 2-3 minutes.

Garnish and Serve:

  • Sprinkle with chopped green onions and optional red chili flakes.
  • Serve the Red-Braised Tofu hot, ideally over steamed rice or with stir-fried vegetables.
