Vegetarian Stir-Fried Rice Noodles (素炒米粉)

素炒米粉, or Vegetarian Stir-Fried Rice Noodles, is a simple yet delightful dish that's perfect for a quick and healthy meal. It's a versatile recipe that you can easily adapt to include your favorite vegetables. Here’s how to make this delicious vegetarian dish at home.

  • 200 g rice noodles thin rice vermicelli
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 carrot julienned
  • 1 bell pepper thinly sliced
  • 1 cup bean sprouts
  • 1 cup cabbage shredded
  • 2 green onions chopped
  • Salt to taste

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce for color, optional
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 cup water or vegetable broth


Prepare the Rice Noodles:

  • Soak the rice noodles in warm water for about 10-15 minutes until they are soft. Drain and set aside.

Prepare the Sauce:

  • In a small bowl, mix together the soy sauce, dark soy sauce, sugar, sesame oil, and water or vegetable broth. Set aside.

Stir-Fry the Vegetables:

  • Heat the vegetable oil in a large wok or frying pan over medium-high heat.
  • Add the minced garlic and stir-fry until fragrant.
  • Add the julienned carrot and bell pepper. Stir-fry for about 2 minutes.
  • Add the cabbage and bean sprouts, continuing to stir-fry for another minute.

Add the Noodles and Sauce:

  • Add the soaked and drained rice noodles to the wok.
  • Pour the prepared sauce over the noodles and vegetables. Toss everything together to ensure the noodles are evenly coated with the sauce.

Final Touches:

  • Stir in the chopped green onions.
  • Cook for another minute, ensuring everything is heated through and well combined.
  • Taste and adjust the seasoning with salt if necessary.


  • Serve the Vegetarian Stir-Fried Rice Noodles hot.
