For the Pork Marinade:

  • 200 g pork loin or tenderloin thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil

For the Stir-Fry:

  • 4 large eggs
  • 2 medium tomatoes cut into wedges
  • 1 cup mushrooms sliced (shiitake, button, or any preferred type)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • White pepper to taste
  • 1 green onion chopped (optional for garnish)
  • 1 clove garlic minced (optional)


Marinate the Pork:

  • In a bowl, mix the thinly sliced pork with soy sauce, cornstarch, and sesame oil. Let it marinate for about 15-20 minutes.

Prepare the Eggs:

  • Beat the eggs in a bowl. Season with a pinch of salt and white pepper. Set aside.

Cook the Pork:

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
  • Add the marinated pork slices and stir-fry until they are cooked through and slightly browned. Remove the pork from the wok and set aside.

Stir-Fry Vegetables:

  • If needed, add a bit more oil to the wok. Add the minced garlic (if using) and fry until fragrant.
  • Add the sliced mushrooms and stir-fry for a couple of minutes.
  • Add the tomato wedges and cook until they start to soften.

Cook the Eggs:

  • Pour the beaten eggs over the tomatoes and mushrooms. Let the eggs set for a moment, then gently scramble them until just set.

Combine Ingredients:

  • Add the cooked pork back into the wok. Mix gently to combine all the ingredients.

Season and Garnish:

  • Adjust seasoning with salt and white pepper.
  • Garnish with chopped green onions if desired.
