Steamed Pork Ribs with Garlic and Fermented Black Beans (蒜茸豆豉蒸排骨)

  • 500 g pork ribs cut into bite-sized pieces
  • 2 tablespoons fermented black beans
  • 4 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons chopped green onions for garnish


Prepare the Ribs:

  • Rinse the pork ribs under cold water, then pat dry with paper towels.
  • If not already done, chop the ribs into bite-sized pieces.

Marinate the Ribs:

  • Rinse the fermented black beans and then mash them slightly.
  • In a large bowl, combine the mashed fermented black beans, minced garlic, soy sauce, oyster sauce, Shaoxing wine, sugar, sesame oil, cornstarch, and white pepper.
  • Add the pork ribs to the marinade and mix well to ensure the ribs are evenly coated. Let them marinate for at least 30 minutes, or preferably overnight in the refrigerator for deeper flavor.

Steam the Ribs:

  • Arrange the marinated pork ribs in a single layer on a heatproof dish that fits inside your steamer.
  • Bring water in a steamer to a vigorous boil, then place the dish with the ribs inside.
  • Cover and steam over high heat for about 30 to 40 minutes, or until the ribs are tender.

Garnish and Serve:

  • Once the ribs are tender, carefully remove the dish from the steamer.
  • Sprinkle chopped green onions over the top of the ribs for a fresh contrast.
  • Serve hot, ideally with steamed rice to soak up the delicious sauce.
