  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For the Dish:

  • 3 large eggs beaten
  • 2 large tomatoes cut into wedges
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon sugar
  • Salt to taste
  • 1 green onion chopped (for garnish)

Marinate the Beef:

  • In a bowl, combine the sliced beef with soy sauce, cornstarch, sesame oil, salt, and pepper. Mix well and let it marinate for about 15-20 minutes.

Prepare the Eggs:

  • In a separate bowl, lightly beat the eggs. Set aside.

Cook the Beef:

  • Heat 1 tablespoon of oil in a wok or large skillet over high heat.
  • Add the marinated beef and stir-fry until it's just cooked through. Remove the beef from the wok and set aside.

Cook the Tomatoes:

  • In the same wok, add another tablespoon of oil.
  • Add the minced garlic and cook until fragrant.
  • Add the tomato wedges and sugar, and cook until the tomatoes are soft and begin to release their juices. Season with salt to taste.

Scramble the Eggs:

  • Push the tomatoes to one side of the wok and pour the beaten eggs into the other side.
  • Let the eggs sit for a few seconds and then gently scramble them until just set but still slightly runny.

Combine Everything:

  • Add the cooked beef back into the wok. Mix everything gently, combining the beef, tomatoes, and eggs.

Garnish and Serve:

  • Garnish with chopped green onions.
  • Serve hot with steamed rice or noodles.
