Pumpkin with Sliced Pork (肉片南瓜)

  • 300 g pork tenderloin or loin thinly sliced
  • 500 g pumpkin peeled and cut into bite-sized chunks
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • A dash of sesame oil
  • 2 tablespoons water or chicken broth
  • Green onions chopped for garnish


Marinate the Pork:

  • In a bowl, mix the sliced pork with soy sauce, a pinch of pepper, and 1 teaspoon of cornstarch. Let it marinate for about 20 minutes.

Prepare the Pumpkin:

  • Peel the pumpkin and cut it into bite-sized chunks.

Cook the Pork:

  • Heat 1 tablespoon of oil in a pan over medium-high heat.
  • Stir-fry the marinated pork until it’s just cooked through. Remove the pork from the pan and set aside.

Cook the Pumpkin:

  • In the same pan, add another tablespoon of oil.
  • Add minced garlic and sauté until fragrant.
  • Add the pumpkin chunks and stir-fry for a few minutes.


  • Add soy sauce, oyster sauce, and sugar to the pan with the pumpkin. Stir well to combine.


  • Add water or chicken broth to the pan. Cover and let it simmer over medium-low heat until the pumpkin is tender, about 10-15 minutes. Stir occasionally and add more water if needed.

Combine with Pork:

  • Once the pumpkin is tender, return the cooked pork to the pan. Stir well to combine.

Final Seasoning:

  • Season with salt and pepper to taste. Drizzle with a dash of sesame oil.

Garnish and Serve:

  • Garnish with chopped green onions.
  • Serve hot as a main dish with steamed rice.
