Curry Beef Brisket with Potatoes (咖喱薯仔牛腩)

Ingredients
  

For the Beef Brisket:

  • 500 g beef brisket cut into chunks
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 large onion chopped
  • 1 tablespoon ginger minced

For the Curry:

  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 can about 400ml coconut milk
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Additional Ingredients:

  • 3-4 medium-sized potatoes peeled and cut into chunks
  • 1 carrot cut into chunks (optional)
  • Fresh cilantro for garnish

Instructions
 

Prepare the Beef:

  • Rinse the beef brisket and pat dry. Season with salt and pepper.

Brown the Beef:

  • In a large pot, heat the oil over medium-high heat. Add the beef brisket pieces and sear them until they are browned on all sides. Remove the beef and set aside.

Sauté Aromatics:

  • In the same pot, add a little more oil if needed. Sauté garlic, onion, and ginger until they become fragrant and slightly golden.

Cook the Curry:

  • Add the curry powder, turmeric, cumin, and coriander to the pot. Stir for about a minute until the spices become aromatic.
  • Pour in the coconut milk and beef broth. Stir well, making sure to scrape up any bits stuck to the bottom of the pot.

Simmer the Beef:

  • Return the beef brisket to the pot. Add soy sauce, oyster sauce, and sugar.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the beef is tender.

Add Potatoes and Carrots:

  • Add the potato and carrot chunks to the pot. Simmer until the vegetables are tender, about 20-30 minutes.

Adjust Seasoning:

  • Taste and adjust the seasoning with salt, pepper, or more soy sauce if necessary.

Serve:

  • Serve the curry beef brisket with potatoes hot, garnished with fresh cilantro.
  • This dish goes well with steamed rice or bread.
