Ingredients
  

For the Bread Dough:

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons instant yeast
  • 1 cup warm milk
  • 1/4 cup unsalted butter melted
  • 1 large egg

For the Coconut Filling:

  • 1 cup desiccated coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 egg for the filling
  • 1/2 teaspoon vanilla extract

For the Egg Wash:

  • 1 egg beaten
  • 1 tablespoon water

Instructions
 

Make the Bread Dough:

  • In a large mixing bowl or the bowl of a stand mixer, combine the flour, sugar, salt, and yeast.
  • Add the warm milk, melted butter, and egg to the dry ingredients. Mix until a soft dough forms.
  • Knead the dough on a lightly floured surface or in the stand mixer for about 8-10 minutes, until it is smooth and elastic.
  • Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.

Prepare the Coconut Filling:

  • In a bowl, mix together the desiccated coconut, sugar, softened butter, egg, and vanilla extract until well combined.

Shape the Bread:

  • Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle.
  • Spread the coconut filling evenly over the dough.
  • Roll up the dough tightly, starting from the long edge, to form a log.
  • Cut the log into slices or leave it whole, depending on your preference.

Second Rise:

  • Place the sliced dough or whole log into a greased loaf pan.
  • Cover and let it rise for another 30-40 minutes, until puffy.

Preheat the Oven:

  • Preheat your oven to 180°C (350°F).

Apply Egg Wash:

  • Gently brush the top of the bread with the beaten egg mixed with water.

Bake the Bread:

  • Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped.

Cool and Serve:

  • Remove the bread from the oven and let it cool in the pan for a few minutes.
  • Transfer it to a wire rack to cool completely.
  • Slice and serve the Coconut Toast Bread.
