椰丝吐司面包, or Coconut Toast Bread, is a delightful treat that combines the sweetness of coconut with the comfort of freshly baked bread. This recipe will guide you through making a soft, fluffy bread loaf with a sweet coconut filling. It's perfect for breakfast or as a snack.
Ingredients
For the Bread Dough:
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon salt
- 2 1/4 teaspoons instant yeast
- 1 cup warm milk
- 1/4 cup unsalted butter melted
- 1 large egg
For the Coconut Filling:
- 1 cup desiccated coconut
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter softened
- 1 egg for the filling
- 1/2 teaspoon vanilla extract
For the Egg Wash:
- 1 egg beaten
- 1 tablespoon water
Instructions
Make the Bread Dough:
- In a large mixing bowl or the bowl of a stand mixer, combine the flour, sugar, salt, and yeast.
- Add the warm milk, melted butter, and egg to the dry ingredients. Mix until a soft dough forms.
- Knead the dough on a lightly floured surface or in the stand mixer for about 8-10 minutes, until it is smooth and elastic.
- Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.
Prepare the Coconut Filling:
- In a bowl, mix together the desiccated coconut, sugar, softened butter, egg, and vanilla extract until well combined.
Shape the Bread:
- Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle.
- Spread the coconut filling evenly over the dough.
- Roll up the dough tightly, starting from the long edge, to form a log.
- Cut the log into slices or leave it whole, depending on your preference.
Second Rise:
- Place the sliced dough or whole log into a greased loaf pan.
