Ingredients
  

For the Soup:

  • 300 g beef brisket cut into chunks
  • 300 g chicken use parts like thighs for more flavor, cut into pieces
  • 2 liters water
  • 2 star anise
  • 1 cinnamon stick
  • 3-4 slices of ginger
  • 3 cloves garlic smashed
  • 1 onion quartered
  • Salt to taste
  • Soy sauce to taste

For the Noodles:

  • 400 g fresh or dried noodles of your choice

Additional Ingredients:

  • Green onions chopped for garnish
  • Bok choy or any preferred leafy greens blanched
  • Chili oil or soy sauce for serving optional

Instructions
 

Prepare the Broth:

  • In a large pot, bring water to a boil. Add the beef brisket, chicken pieces, star anise, cinnamon stick, ginger slices, smashed garlic, and onion. Reduce the heat to a simmer.
  • Skim off any scum that rises to the surface. Cover and simmer for about 1.5 to 2 hours, or until the beef and chicken are tender.

Cook the Noodles:

  • In a separate pot, cook the noodles according to the package instructions. Drain and set aside.

Prepare the Greens:

  • While the soup is simmering, blanch the bok choy or your choice of greens in boiling water for 1-2 minutes until tender. Drain and set aside.

Season the Broth:

  • Once the beef and chicken are tender, remove them from the broth and set aside. You can shred or chop the meat into bite-sized pieces.
  • Strain the broth to remove the solids and return it to the pot. Bring it back to a simmer and season with salt and soy sauce to taste.

Assemble the Bowls:

  • Place a portion of cooked noodles in each bowl. Arrange the shredded beef and chicken, and blanched greens on top of the noodles.
  • Ladle the hot broth over the noodles, ensuring to cover the ingredients.

Serve:

  • Garnish with chopped green onions. Serve with chili oil or extra soy sauce on the side, if desired.
