Beef Stir-Fried Rice Noodles (牛肉炒米粉)

Ingredients
  

For the Beef:

  • 200 g beef sirloin or flank steak works well, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil for cooking

For the Rice Noodles:

  • 200 g dried rice noodles thin or wide based on preference

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 medium carrot julienned
  • 1 bell pepper sliced into thin strips
  • A handful of bean sprouts optional
  • 2 green onions chopped

For the Sauce:

  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce for color, optional
  • 1 teaspoon sugar
  • 1/2 teaspoon ground white pepper
  • 1/4 cup water or beef broth

Instructions
 

Marinate the Beef:

  • In a bowl, mix the thinly sliced beef with soy sauce and cornstarch. Let it marinate for about 15-20 minutes.

Prepare the Rice Noodles:

  • Soak the dried rice noodles in hot water for about 5-10 minutes or until they are just tender. Drain the noodles and set aside. Be careful not to over-soak, as they will cook further when stir-frying.

Mix the Sauce:

  • In a small bowl, combine the oyster sauce, soy sauce, dark soy sauce (if using), sugar, white pepper, and water or beef broth. Stir until well mixed and set aside.

Cook the Beef:

  • Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat. Add the marinated beef slices and stir-fry until they are just cooked through. Remove the beef from the pan and set aside.

Stir-Fry Vegetables:

  • In the same pan, add another tablespoon of oil if needed. Add the minced garlic and stir-fry for a few seconds until fragrant.
  • Add the julienned carrot and bell pepper strips. Stir-fry for a few minutes until they start to soften.

Combine Noodles and Sauce:

  • Add the drained noodles to the pan with the vegetables. Pour the prepared sauce over the noodles and vegetables. Toss everything together over medium heat until the noodles are evenly coated with the sauce.

Add Beef and Final Touches:

  • Return the cooked beef to the pan. Add the bean sprouts and chopped green onions. Stir-fry everything together for another 1-2 minutes until well combined and heated through.

Serve:

  • Serve the beef stir-fried rice noodles hot. Adjust seasoning if necessary, and enjoy!
