Beef Brisket Noodle Soup (牛腩湯面)

Beef Brisket Noodle Soup, or 牛腩湯面, is comfort food at its best—warm, nourishing, and deeply satisfying.
This comforting dish features tender beef brisket simmered in a flavorful broth, served over a bed of noodles. It's a staple in many Chinese cuisines and is particularly popular for its savory, meaty flavors and the comforting warmth it provides.

For the Beef Brisket:

  • 800 g beef brisket cut into chunks
  • 2 slices of ginger
  • 3 cloves garlic peeled
  • 1 tablespoon vegetable oil

For the Broth:

  • 2 liters water
  • 3-4 slices of ginger
  • 3-4 stalks green onions tied into knots
  • 1 star anise
  • 1 cinnamon stick
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste

For the Noodles and Toppings:

  • 400 g fresh Chinese noodles
  • 2 bok choy blanched
  • Additional chopped green onions for garnish


Blanch the Beef:

  • In a pot of boiling water, blanch the beef brisket chunks for about 3 minutes to remove impurities. Drain and set aside.

Brown the Beef:

  • In a large pot, heat vegetable oil over medium heat. Add slices of ginger and garlic cloves. Brown the beef brisket chunks in the pot for a few minutes until they change color.

Prepare the Broth:

  • To the pot with the beef, add 2 liters of water, slices of ginger, stalks of green onions, star anise, and cinnamon stick.
  • Bring the mixture to a boil, then reduce to a simmer.
  • Cover and cook for 1.5 to 2 hours, or until the beef is tender.

Season the Broth:

  • Remove the spices and green onions from the broth.
  • Add soy sauce and oyster sauce to the broth. Season with salt and pepper to taste.

Prepare the Noodles:

  • In a separate pot, cook the fresh Chinese noodles according to package instructions until al dente.
  • Drain and set aside.

Assemble the Dish:

  • Place a portion of noodles into individual serving bowls.
  • Ladle the hot beef brisket and broth over the noodles.
  • Add blanched bok choy to the side.
  • Garnish with additional chopped green onions if desired.
