  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 liter of water or beef broth for a richer flavor

  • 400 g fresh or dried noodles of your choice
  • 2 eggs boiled or poached, according to preference
  • Green onions chopped for garnish
  • Bok choy or any leafy greens blanched (optional)

Instructions
 

Prepare the Beef Brisket:

  • In a large pot, heat the vegetable oil over medium heat. Add the ginger slices and minced garlic, sautéing until fragrant.
  • Add the beef brisket chunks to the pot. Brown the brisket on all sides.
  • Add the star anise, cinnamon stick, soy sauce, and oyster sauce. Stir to coat the beef evenly with the seasonings.
  • Pour in the water or beef broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 1.5 to 2 hours, or until the beef is tender. Season with salt and pepper to taste.

Cook the Noodles:

  • Cook the noodles according to the package instructions. If using fresh noodles, boiling them for a few minutes until they are just tender usually suffices. For dried noodles, follow the package instructions for the best results. Drain the noodles and set them aside.

Prepare the Eggs:

  • While the beef is simmering, prepare the eggs. For boiled eggs, cook them in boiling water for about 7 minutes for soft-boiled or longer for hard-boiled. For poached eggs, crack each egg into a small bowl and gently slide it into simmering water, cooking until the whites are set but the yolks remain runny. Remove the eggs with a slotted spoon and set aside.

Assemble the Dish:

  • Divide the cooked noodles among bowls. Ladle the hot beef brisket and broth over the noodles.
  • Add a boiled or poached egg to each bowl.
  • Add blanched greens like bok choy if using.
