Ingredients
  

For Cookies:

  • 200 g almond flour
  • 100 g all-purpose flour
  • 120 g unsalted butter room temperature
  • 100 g powdered sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • A pinch of salt

  • Whole almonds for garnish
  • 1 egg yolk beaten for egg wash

Prepare Cookie Dough:

    Combine Dry Ingredients:

    • In a mixing bowl, whisk together almond flour, all-purpose flour, and a pinch of salt. Set aside.

    Cream Butter and Sugar:

    • In a separate bowl, cream the unsalted butter and powdered sugar together until light and fluffy.

    Add Egg and Almond Extract:

    • Beat in the egg and almond extract until well combined.

    Mix Dry and Wet Ingredients:

    • Gradually add the dry ingredients to the wet ingredients. Mix until a dough forms.

    Chill:

    • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the dough to firm up.
    • Preheat Oven and Prepare Baking Sheet:

    Line Baking Sheet:
