Sweet and Sour Pork (甜酸咕噜肉)

Ingredients
  

For the Pork:

  • 400 g pork loin or pork shoulder cut into bite-sized chunks
  • 1 cup all-purpose flour for dredging
  • 2 beaten eggs for coating
  • Oil for deep frying

For the Sauce:

  • 1/2 cup pineapple juice
  • 1/4 cup rice vinegar
  • 1/4 cup ketchup
  • 3 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch

For the Stir-fry:

  • 1/2 cup pineapple chunks
  • 1/2 cup bell pepper diced (use colorful varieties for visual appeal)
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon oil

Instructions
 

Prep the Pork:

  • Season the pork chunks with salt and pepper. Then dip them first into beaten eggs and then dredge them in the flour.

Deep Fry:

  • Heat the oil in a deep fryer or large wok to about 180°C. Deep fry the pork chunks until golden and crispy. Remove and set aside on a paper towel to drain excess oil.

Make the Sauce:

  • In a bowl, whisk together the pineapple juice, rice vinegar, ketchup, sugar, soy sauce, and cornstarch. Make sure there are no lumps in the mixture.

Stir-fry Vegetables:

  • Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Add the minced garlic, diced onion, and bell peppers, and stir-fry for about 2 minutes or until slightly softened.

Add Pineapple:

  • Add the pineapple chunks to the skillet and stir well.

Add Sauce:

  • Pour in the sauce mixture and let it come to a simmer. The sauce should thicken slightly.

Combine with Pork:

  • Add the crispy pork chunks to the skillet, tossing them in the sauce to coat evenly.

Serve:

  • Once the pork is well-coated with the sauce, transfer the dish to a serving platter.
