Stir-Fried Rice Noodles with Shredded Pork (肉絲炒米粉)

肉絲炒米粉, or Stir-Fried Rice Noodles with Shredded Pork, is a classic and versatile Chinese dish. It features thin rice noodles (also known as rice vermicelli) stir-fried with tender strips of pork and a variety of vegetables, all coated in a savory sauce. This dish is light yet flavorful and can be enjoyed as a main course or a side dish. Here's how to prepare it.

Ingredients
  

For the Pork and Marinade:

  • 200 g pork tenderloin thinly sliced into strips
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch

For the Stir-Fry:

  • 200 g rice noodles rice vermicelli
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 carrot julienned
  • 1 bell pepper thinly sliced
  • 1/2 cup bean sprouts
  • 2 green onions chopped
  • 1 egg lightly beaten (optional)

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 cup chicken broth or water
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

Instructions
 

Marinate the Pork:

  • In a bowl, combine the pork strips with soy sauce, sesame oil, and cornstarch. Mix well and let it marinate for about 15-20 minutes.

Prepare the Rice Noodles:

  • Soak the rice noodles in warm water for about 10-15 minutes until they are soft. Drain and set aside.

Prepare the Sauce:

  • In a small bowl, mix together soy sauce, oyster sauce, sugar, and chicken broth. Set aside.

Cook the Pork:

  • Heat 1 tablespoon of oil in a wok or large skillet over high heat.
  • Add the marinated pork and stir-fry until cooked through. Remove from the wok and set aside.

Stir-Fry Vegetables:

  • Add another tablespoon of oil to the wok. Sauté garlic for a few seconds.
  • Add the julienned carrot and bell pepper. Stir-fry for a couple of minutes.

Add Noodles and Sauce:

  • Add the drained noodles to the wok. Pour the prepared sauce over the noodles.
  • Stir-fry everything together, ensuring the noodles are evenly coated with the sauce.

Add Egg (Optional):

  • Push the noodles to one side of the wok. Pour the beaten egg into the other side and scramble it. Once cooked, mix it with the noodles.

Return the Pork and Finish:

  • Add the cooked pork back to the wok along with bean sprouts and green onions.
  • Toss everything together and cook for another minute.

Serve:

  • Serve the Stir-Fried Rice Noodles with Shredded Pork hot.
