Pork Chops with Tomato and Onion (洋蔥番茄猪扒)

Ingredients
- 4 pork chops about 1-inch thick
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 2 medium onions sliced
- 2 tomatoes sliced
- 2 cloves garlic minced
- 1 teaspoon dried herbs such as thyme or oregano
- 1/2 cup chicken broth or water
- Optional: 1 tablespoon soy sauce for added flavor
Instructions
Prepare the Pork Chops:
- Season the pork chops generously with salt and pepper on both sides.
Brown the Pork Chops:
- Heat the oil in a large skillet over medium-high heat.
- Add the pork chops and sear them until golden brown on both sides, about 3-4 minutes per side.
- Remove the pork chops from the skillet and set them aside.
Cook the Vegetables:
- In the same skillet, reduce the heat to medium. Add the sliced onions and cook until they begin to soften, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the sliced tomatoes and dried herbs, stirring to combine. Cook for another 3-4 minutes, until the tomatoes start to break down.
Deglaze and Simmer:
- Pour in the chicken broth (or water) and optional soy sauce. Stir to lift any browned bits off the bottom of the skillet.
- Return the pork chops to the skillet, nestling them into the tomato and onion mixture.
Finish Cooking:
- Cover the skillet and let it simmer over low heat for about 10-15 minutes, or until the pork chops are fully cooked and tender. The internal temperature of the pork should reach at least 145°F (63°C).
Serve:
- Serve the pork chops hot, topped with the tomato and onion mixture. This dish pairs well with mashed potatoes, rice, or a simple green salad.
