Ingredients
  

  • 4 pork chops about 1-inch thick
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 2 medium onions sliced
  • 2 tomatoes sliced
  • 2 cloves garlic minced
  • 1 teaspoon dried herbs such as thyme or oregano
  • 1/2 cup chicken broth or water
  • Optional: 1 tablespoon soy sauce for added flavor

Instructions
 

Prepare the Pork Chops:

  • Season the pork chops generously with salt and pepper on both sides.

Brown the Pork Chops:

  • Heat the oil in a large skillet over medium-high heat.
  • Add the pork chops and sear them until golden brown on both sides, about 3-4 minutes per side.
  • Remove the pork chops from the skillet and set them aside.

Cook the Vegetables:

  • In the same skillet, reduce the heat to medium. Add the sliced onions and cook until they begin to soften, about 5 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Add the sliced tomatoes and dried herbs, stirring to combine. Cook for another 3-4 minutes, until the tomatoes start to break down.

Deglaze and Simmer:

  • Pour in the chicken broth (or water) and optional soy sauce. Stir to lift any browned bits off the bottom of the skillet.
  • Return the pork chops to the skillet, nestling them into the tomato and onion mixture.

Finish Cooking:

  • Cover the skillet and let it simmer over low heat for about 10-15 minutes, or until the pork chops are fully cooked and tender. The internal temperature of the pork should reach at least 145°F (63°C).

Serve:

  • Serve the pork chops hot, topped with the tomato and onion mixture. This dish pairs well with mashed potatoes, rice, or a simple green salad.
