Curry Potato Beef Brisket (咖哩薯仔牛腩)

Ingredients
  

  • 500 g beef brisket cut into bite-sized chunks
  • 300 g potatoes peeled and cut into chunks
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 1 thumb-sized ginger sliced
  • 2-3 tablespoons vegetable oil
  • 3 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 400 ml coconut milk or beef broth
  • 1-2 tablespoons soy sauce
  • Salt and pepper to taste
  • Chopped cilantro for garnish optional

Instructions
 

Marinate Beef:

  • In a bowl, combine beef brisket, soy sauce, and a pinch of pepper. Let it marinate for at least 30 minutes.

Prepare the Curry Paste:

  • In a separate bowl, mix the curry powder and turmeric powder with a little water to make a paste. Set aside.

Cook the Beef:

  • Heat vegetable oil in a large pot or wok over medium heat. Add ginger, garlic, and onion. Stir-fry until fragrant.
  • Add the marinated beef and stir-fry until it turns brown. Remove the beef from the pot and set aside.

Curry Base:

  • In the same pot, add the curry paste and stir-fry for 1-2 minutes until aromatic.

Combine and Simmer:

  • Return the cooked beef to the pot. Add coconut milk or beef broth, stirring well to combine with the curry paste.
  • Lower the heat, cover, and let it simmer for at least 1 hour, or until the beef is tender.

Add Potatoes:

  • Add the potato chunks to the pot, making sure they are submerged in the curry.
  • Cover and continue to simmer for another 20-30 minutes, or until the potatoes are tender.

Season:

  • Add salt and pepper to taste. Adjust the curry consistency by adding more coconut milk or beef broth if needed.

Garnish and Serve:

  • Once everything is cooked to your liking, turn off the heat.
  • Optionally, garnish with chopped cilantro before serving.
