Ingredients
  

For the Beef Brisket:

  • 500 g beef brisket cut into chunks
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 medium onion chopped
  • 1 star anise
  • 1 cinnamon stick

For the Curry:

  • 2-3 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika optional, for color
  • 3-4 medium potatoes peeled and cut into chunks
  • 1 large carrot sliced (optional)
  • 2 cups beef or chicken broth
  • 1 cup coconut milk or water
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar

Instructions
 

Prepare the Beef:

  • Blanch the beef brisket in boiling water for about 5 minutes to remove any impurities. Drain and set aside.

Brown the Beef:

  • Heat oil in a large pot over medium heat. Add the beef brisket and brown on all sides. Remove and set aside.

Sauté Aromatics:

  • In the same pot, add garlic and onion. Sauté until the onion is translucent. Add star anise and cinnamon stick, and stir-fry until fragrant.

Add Curry Spices:

  • Mix in curry powder, turmeric, and paprika. Stir well for about a minute until the spices are fragrant.

Cook the Beef and Vegetables:

  • Return the beef to the pot. Add the potatoes and carrots.
  • Pour in the beef or chicken broth and coconut milk (or water). Stir well.

Simmer:

  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender.

Season:

  • Add soy sauce, oyster sauce, and sugar. Adjust salt and pepper to taste.

Thicken the Curry (Optional):

  • If you prefer a thicker curry, mix a small amount of cornstarch with water and stir it into the curry. Cook for a few more minutes until the desired consistency is reached.
