Coffee Big Bun (咖啡大包)

These buns are known for their sweet coffee glaze on top, which complements the soft, fluffy bread underneath. Here’s a recipe to make your own Coffee Big Bun at home.
Ingredients
For the Bun Dough:
- 500 g all-purpose flour
- 250 ml warm milk
- 10 g instant yeast
- 50 g sugar
- 50 g unsalted butter softened
- 1 egg
- 1/2 teaspoon salt
For the Coffee Topping:
- 100 g unsalted butter softened
- 120 g powdered sugar
- 3 tablespoons instant coffee dissolved in 1 tablespoon of hot water
- 1 egg
- 120 g all-purpose flour
Instructions
Make the Bun Dough:
- In a large bowl, combine the warm milk, sugar, and instant yeast. Let it sit for about 5 minutes until it becomes frothy.
- Add the flour, egg, softened butter, and salt to the yeast mixture. Mix until the dough comes together.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Prepare the Coffee Topping:
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the egg and the dissolved coffee mixture.
- Gradually add the flour, stirring until the mixture is smooth.
Shape and Assemble the Buns:
- Once the dough has doubled in size, punch it down and divide it into 8 equal pieces.
- Shape each piece into a ball and place them on a baking tray lined with parchment paper.
- Allow the shaped buns to rise for another 30 minutes.
- Carefully spread the coffee topping over each bun, covering the tops.
Bake the Buns:
- Preheat the oven to 180°C (350°F).
- Bake the buns for about 15-20 minutes, or until the topping is crisp and golden, and the buns are cooked through.
