Ingredients
For the Chicken:
- 500 g boneless chicken thighs or breasts cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 2 cloves garlic minced
- 1 tablespoon ginger minced
- 1 onion chopped
- 1 bell pepper cut into chunks
- 2 tablespoons fermented black beans rinsed and mashed
- 1 tablespoon Shaoxing wine or dry sherry
For the Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 cup chicken broth or water
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
Instructions
Marinate the Chicken:
- In a bowl, mix the chicken pieces with soy sauce, cornstarch, and sesame oil. Let it marinate for about 15-20 minutes.
Prepare the Sauce:
- In a small bowl, combine soy sauce, oyster sauce, sugar, and chicken broth. Set aside.
Stir-Fry the Chicken:
- Heat 1 tablespoon of oil in a wok or large skillet over high heat.
- Add the marinated chicken and stir-fry until it’s cooked through and lightly browned. Remove from the wok and set aside.
Cook the Aromatics:
