Char Siu and Egg Fried Rice (叉燒蛋炒飯)

叉燒蛋炒飯, or Char Siu and Egg Fried Rice, is a classic Cantonese dish that's beloved for its delightful combination of savory char siu (Chinese BBQ pork) and fluffy eggs, combined with aromatic fried rice. This dish is a staple in Chinese cuisine and is perfect for a quick and satisfying meal. Here’s how you can make Char Siu and Egg Fried Rice at home.

Ingredients
  

  • 3 cups of cooked jasmine rice preferably day-old
  • 200 g char siu Chinese BBQ pork, diced
  • 2 large eggs beaten
  • 1/2 cup frozen peas thawed
  • 2 green onions thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Dice the char siu into small, bite-sized pieces. Beat the eggs and slice the green onions. Set aside.

Cook the Eggs:

  • Heat a wok or large frying pan over medium heat. Add a teaspoon of oil.
  • Pour in the beaten eggs and scramble until just set. Remove the eggs from the wok and set aside.

Cook the Char Siu:

  • In the same wok, add a bit more oil if necessary. Add the diced char siu and stir-fry until it starts to caramelize. Remove and set aside.

Sauté Garlic and Peas:

  • Add another tablespoon of oil to the wok. Add minced garlic and peas, stir-frying until the peas are just cooked.

Add Rice:

  • Add the cooked rice to the wok. Stir-fry everything together, breaking up any clumps of rice.

Season:

  • Drizzle the soy sauce and sesame oil over the rice. Season with salt and pepper. Stir everything thoroughly to ensure the rice is evenly coated with the seasonings.

Add Char Siu and Eggs:

  • Add the cooked char siu and scrambled eggs back into the wok. Mix well to combine.
  • Garnish with Green Onions:
  • Stir in the sliced green onions.

Serve:

  • Serve the Char Siu and Egg Fried Rice hot as a main dish or as a side to other Chinese dishes.
