Air Fryer Roast Pork (氣炸锅燒肉)

This refers to a method of cooking roast pork using an air fryer, which provides a healthier alternative to traditional roasting or frying by using less oil while still achieving a crispy exterior and tender interior.

Ingredients
  

  • 500 g pork belly
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 1 teaspoon Chinese five-spice powder
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 tablespoon vinegar for brushing
  • Additional salt for the skin

Instructions
 

Prepare the Pork:

  • Score the skin of the pork belly with sharp knife cuts, ensuring not to cut too deep into the fat.
  • In a small bowl, mix together salt, sugar, five-spice powder, pepper, garlic, soy sauce, and Shaoxing wine to create the marinade.
  • Rub the marinade onto the meat side of the pork belly, avoiding the skin. Let it marinate for at least 2 hours, or overnight for deeper flavor, in the refrigerator.

Prepare for Cooking:

  • Remove the pork from the refrigerator and let it come to room temperature for about 30 minutes before cooking.
  • Pat the skin dry with paper towels and brush lightly with vinegar. Sprinkle a thin layer of salt over the skin. This will help to crisp the skin.

Air Fry the Pork:

  • Preheat the air fryer to 200°C (390°F).
  • Place the pork belly in the air fryer basket, skin-side up.
  • Cook for about 30 minutes, then reduce the temperature to 160°C (320°F) and cook for another 30 minutes, or until the skin is crispy and the meat is tender.

Finish and Serve:

  • Once cooked, remove the pork from the air fryer and let it rest for about 10 minutes before slicing. This helps retain the juices.
  • Slice the pork into pieces and serve with rice, steamed vegetables, or your favorite dipping sauce.
